Museum restaurant/cafe and store contracts -- How do you structure your contract with outside vendor?
We're reviewing our cafe/store contract with an outside vendor -- specifically thinking about the commission structure. Anybody out there who uses a third-party provider for cafe/store services willing to share how they set up the commission (and/or some other revenue sharing arrangement)? Straight percentage on gross sales across both food and merchandise? Tiered system based on volume? Flat rate like a retail lease?
